Less washing up so ideal for a Christmas party food recipe, Christmas Roast side dish recipe, Easter Roast side dish recipe or Easter lunch recipe idea. Give these bacon Yorkshire puddings a go!

Ingredients

– 1 pack of The Jolly Hog Double Smoked British Streaky Bacon
– 2 free range eggs
– Plain flour
– Milk
– Salt and pepper to taste.
– Sprigs of thyme or rosemary
– Veg oil

Method

– Cook your bacon according to pack instructions until crispy.
– Pre heat the oven to 200c.
– Put oil in your baking tray in each well for the Yorkshire puddings and add the tray to the oven for 10 minutes for it to heat up.
– To make the super easy Yorkshire pudding batter, crack 2 eggs into a mug or small bowl.
– Remove them and place in another larger bowl. Pour the milk in the first mug or small bowl to the exact point the eggs came up to (you can tell by the mark they leave).
– Pour the milk into the smaller bowl with the eggs and then repeat the same process with flour, making sure it goes to the same height on the mug as the milk and eggs did. See, we told you it was easy, no measuring equipment required!
– Add salt and pepper to your Ultimate Yorkshire pudding batter. You can even add mustard powder (Olly loves doing this to add a kick to these mini toad in the holes).
– Whisk the batter until it’s smooth.
– After your 10 min timer goes off, remove the tray from the oven and then pour in your batter evenly across the Yorkshire pudding moulds. You can pop in fresh thyme or rosemary at this point in the batter.
–  Pour in the bacon crisps at this point to make your bacon Yorkshire puddings. You can keep a bit of the crispy bacon aside to sprinkle on top for an extra impressive Christmas dinner side dish recipe.
– Lower the oven to about 180 and then pop your Yorkshire puddings back in the oven. Allow them to cook for 20-30 mins. DO NOT open the door, as this will stop the Yorkshire puddings with pigs in blankets in from rising. Peek through the door if you can and remove them from the oven when they’re browned and fully risen! Serve up this ultimate Yorkshire pudding recipe with mustard to dip!
