This sausage traybake recipe is the perfect Summer traybake recipe in our eyes. This sausages and pepper recipe combines our sweet Caramelised Porker British Sausages with caramelised onions with tangy balsamic vinegar and punchy garlic for a delicious sausage recipe for dinner.
2 red onions, cut into wedges
2 red peppers, deseeded and torn into rough chunks
1 bulb garlic, cut in half horizontally
400g cherry tomatoes on the vine, mixed colour if available
400g The Jolly Hog Caramelised Porker British Sausages (our Caramelised Onion Sausages, but you could also use our peppery Proper Porker British Sausages)
2 tbsp balsamic vinegar
2 tbsp olive oil
2 courgettes, sliced into chunky slices
6 sprigs thyme
