Buckle up kids because we may have just made the most amazing lunch time sarnie. As much as we’re fans of the old BLT or sausage sandwich, we love mixing it up with our baguettes, so BOOM the Vietnamese Sausage baguette (or Bánh mì ) was born! Try this recipe for a flavoursome lunch when you’re short on time but fancy something full of flavour!
• 4 Jolly Hog x Proper Porkers (or Caramelised Onion Porkers work great)
• Soy sauce
• 2 cloves of garlic
• Spinach (about half a pack)
• Red cabbage
• Honey
• Baguette
• Cucumber
• Red onion
• Mayo
• Mustard
• Take 4 of our sausages and run a knife down the skin. Take out the sausage meat and discard the skins.
• Chop red cabbage into thin slices.
• In a frying pan (or Instant Pot, if you have one of those beauties) sautee the sausage meat with the red cabbage and some sesame oil (or coconut).
• Crush and dice 2 cloves of garlic and chuck into the pot alongside 1 tbsp honey.
• Stir until the sausage meat looks almost cooked (when there’s. no pink showing).
• Chuck some spinach in at the last minute so it doesn’t wilt too much.
• Whilst the pork is finishing up, mix equal parts mustard with mayo and half the amount of honey in a bowl.
• Chop up red onion and cucumber into slices.
• Bundle your Vietnamese sausage meat into your baguette and add rocket, your chopped veg and a drizzle of your mustard mayo to make you delicious Bánh mì.
