Romesco pasta – Sausage pasta recipe
This is one of our favourite Summer sausage pasta recipes. This beautiful romesco pasta is a great quick and easy dinner that sneaks in some veg. Romesco sauce pasta recipes are great for Summer thanks to their fresh and jammy flavours, and this romesco pasta recipe is made even better with our peppery Proper Porker British Sausages. We love a romesco sauce recipe with our sausages so even better when that’s combined with a sausage meat pasta recipe. Try this pasta with sausage recipe for a delicious mid-week meal or when you have guests over!
Ingredients
2 large roasted red peppers (or roast your own, recipe below)
3 sundried tomatoes
Almonds (chopped or roasted work well)
1 tbsp red wine vinegar
2 tbsp olive oil
Chopped parsley
Rigatoni (or pasta of your choice)
Method
– To make this romesco pasta recipe, begin by chopping the peppers & tomatoes (We roasted our peppers for 35 mins but you could also buy roasted red peppers to make it an even quicker sausage pasta recipe)
– Chop the almonds and garlic.
– Add it all to a food processor or you can give it a really good chop and stir for a chunkier romesco.
– Squeeze the sausage meat out of the sausages, break up the meat with a spatula and pan fry until crispy. This will form your flavoursome sausage meat for this sausage meat pasta recipe.
– Cook your pasta keeping some of the pasta water when you drain it.
– Chuck the pasta and your romesco sauce into the pan with the sausage meat. Stir through with a bit of pasta water to make the silky pasta sauce, forming your romesco sauce pasta recipe.
– Top with parsley and parmesan.
