To begin this fusion pork burger recipe, start by pickling some carrots by peeling and slicing thinly. Add vinegar, a pinch of sugar, a pinch of salt and some hot water to cover.
Make your sausage burger patties by squeezing the meat out of our British pork sausages into a bowl. Mince 2 garlic cloves, 1 lemongrass stalk, 1 red chilli & a couple spring onions then add in to the mix.
Add in 1 tbsp fish sauce and 1 tbsp soy sauce and then mix away to create flavour packed pork smash burgers. Mould into equal sized balls.
Pan fry the sausage patties, using something hard to press them down into pork smash burgers. Cook for a few mins until crispy on one side then flip, and add a slice of cheese for the final couple of mins.
Give your buns a quick heat, then a dollop of sriracha mayo. Add your burgers, top with the pickled carrots and tear in some coriander and mint for extra freshness.
