We love thisFennel and Sausage Pasta recipe that influencer @bristolbigbites made with our Proper Porker British Sausages. Sausage and fennel is a great combo and this creamy pasta recipe really shows off the winning flavour combination.
Ingredients (Serves 4)
1 Pack of Jolly Hog Proper Porker Sausages
1 White Onion
1 Fennel
4 Cloves of Garlic
1 Tbsp of Fennel Seeds
1 Tbsp of Peppercorns
1/2 Tbsp Dried Thyme
Salt
1 Jelly Chicken stock cube
200ml Cream
300g of Rigatoni
Parmesan
Fresh Parsley
1. Slice your sausages and remove the meat from their skins
2. Slice Fennel, Onion, Garlic and Parsley
3. Grind the fennel seeds and peppercorns in a pestle and mortar
4. Fry off your Fennel, Onion, Garlic and till this starts to wilt and brown
5. Add in your sausage meat making sure to break this up as it is cooking
6. Mix everything and combine in your fennel seeds, peppercorns, salt and thyme
7. Put your rigatoni on to boil according to packet instructions
8. Add your stock cube to 100ml of boiling water and pour this in with your sausage meat, alongside our cream and grate in as much parmesan as your heart desires! Let the sauce simmer for 10mins.
9. Drain off your pasta, combine it with the sauce and service up with fresh parsley and more parmesan
