Ultimate Christmas Sandwich Recipe with potatoes

The ULTIMATE Christmas sandwich recipe. This pimped up sausage sandwich is not only an epic Christmas sandwich recipe, but it’s also a great Christmas dinner leftovers sandwich recipe, making use of any leftover roast potatoes (if you ever have them!). Ingredients

SERVES 1 

2 The Jolly Hog Proper Porkers British Sausages

2 The Jolly Hog Double Smoked Streaky Bacon rashers  

2 slices bread  

1 tsp mustard of choice, we like wholegrain or robust mustard

60g cooked potato, sliced, diced or slightly crushed (you can use cooked baby potatoes or even leftover roast potatoes) 

30g soft washed-rind French cheese, like reblochon  

20g Wyke Mature Cheddar Cheese

6 gherkin slices  

1 tsp runny honey, optional  

Method

  • To make this ultimate Christmas sandwich recipe, preheat oven to 190C/170C fan/gas 5. 
  • Place the sausages on a baking tray and bake in the oven for 20 – 25 minutes. In the last 10 minutes of cooking add the bacon rashers. Slice the sausages in half lengthways once cooked and set aside for the time being. Toast the bread on both sides before spreading one slice with the mustard. Add the cooked potato to the slice with mustard before roughly chopping the cheese and layering on top of the potato. 
  • Turn on the grill to medium-high and place the potato and cheese topped slice under the grill for 2 – 3 minutes until the cheese has melted and starting to turn golden. On the other slice stack the cooked sausages, bacon and finally the slices of gherkins. You could try anything from jalapenos to cornichons as pickles in this sausage sarnie recipe, or mix it up with a caramelised onion chutney for more Christmas sandwich ideas.
  • Drizzle the honey over the grilled cheese and sandwich the two slices together. Slice in half and eat immediately. Serve with additional mustard if desired.
