– 2 packs of our British Outdoor Bred Black Treacle Ham
– Arborio Risotto Rice (we used about 220g for two)
– 2 garlic cloves
– 1 white onion
– 2 x St Ewes eggs
– 100ml or so white wine (give it a generous glug for the risotto and for yourself!)
– Olive oil
– Parmesan
– Black Pepper
– 1 chicken stock cube
– (Optional) Cream or soft cheese or cream cheese to up the cheese factor
– For this Ham risotto recipe, start by chopping the onion and garlic into thin slices.
– Heat up olive oil or butter in a large pan. Add the onion and garlic. Let it sizzle away for a few minutes until the onion & garlic begin to soften.
– Pour in your risotto rice. Again, let it sizzle for a minute, stirring constantly to avoid it sticking.
– Pour in your white wine to the carbonara risotto and let it reduce.
– Tear up a pack of our British Outdoor Bred ham and stir it into the risotto.
– Boil and stir the chicken stock cube and then add it to the risotto very slowly. Take your time with this process, allowing the risotto to absorb the liquid. It shouldn’t take more than 15 minutes (listen to your favourite podcast or catch up on your guilty pleasure TV whilst you’re waiting!). Remember to keep stirring.
– In a mug or bowl, crack 2 eggs. Pour in a very generous helping of parmesan & a generous helping of black pepper. If you want to use a cream or creamy cheese, chuck that in there into the carbonara sauce, but we didn’t. Stir the ingredients together.
– Remove your easy risotto from the heat when the rice is cooked but still slightly al dente. Once removed from the heat, pour the carbonara sauce over the risotto & stir through quickly. There’s your carbonara risotto!
– Tear up another pack of our Ham (we recommend the Black Treacle Ham for this recipe) and sprinkle it throughout the risotto. Sprinkle it with more black pepper & parmesan to get to your liking.
