For the homemade pistachio pesto (chucked in a blender):
To begin this posh sausage and beans recipe, start by prepping your posh baked beans! This homemade baked beans recipe is our favourite for making a tastier version of everyone’s nostalgic childhood favourite. A bit of a combo between a casserole, homemade baked beans, and the flavours of a pizza, these pizza beans are a must try.
To make them, add the beans (with the juice from the jar) into the mushrooms, garlic and shallots – all chopped – into an ovenproof casserole dish and season generously. Stir together then roast on a low heat for 45 mins.
When the homemade beans recipe is ready, remove it from the oven and place on a low temperature on the hob.
Chuck the pack of our British sausages into the oven and cook according to pack instructions.
Add the chopped tomatoes, spinach and half the basil into the butter beans mix, and simmer slowly for an hour or so. This sounds like a long shift but trust us it’s worth it, and you can make ahead on Friday morning ready for a weekend of delicious brunches.
Remove the butter beans beans recipe from the heat when thickened, and stir in the remaining basil and a good handful of parmesan.
Finally, you can blend up all of the pistachio pesto ingredients for a homemade pistachio pesto recipe, or cheat and buy store bought! Pile it all together on a plate and top some fresh bread with your pistachio pesto. Delicious stuff.
