It’s pumpkin spiced latte season! This warming Autumn Salad will leave you feeling glowing inside (kind of like a carved pumpkin lantern). The spiced sweet potato adds a nice, warming kick and, combined with the bacon, helps keep you full for longer. Try this with our treacle bacon for an extra treat, with the smokiness and sweetness curing that sweet tooth fix craving! • 1 pack of Jolly Hog Treacle bacon
• 2 sweet potatoes
• Pumpkin (optional)
• Wholegrain mustard
• Honey
• Chilli Flakes
• Salad
• Red onion
• Balsamic glaze or balsamic vinegar
• Peel your sweet potatoes and chop them into fingers. You can also add pumpkin at this point for roasting, we just were too hungry & short on time!
• Add them to a roasting tray and coat with olive oil.
• Sprinkle with pepper, salt and chilli flakes. You can also add cinnamon for an extra Autumn touch or remove the chilli altogether for children!
• Make sure the spiced sweet potato chunks are covered with the oil and seasoning then leave to roast on 220 fan/200 oven. Check back after 20 mins.
• Chop red onions into smaller slices.
• Fry your onions in a frying pan for a minute or so, then add in the balsamic glaze and stir until the onions begin to caramelise. Remove from the pan.
• In a separate pan, fry your bacon on both sides until cooked & crispy then remove.
• Chuck your bacon, roasted veg and onions on top of a bed of rocket and spinach. Job done!
